A smooth Dutch style cheese with a nutty finish, this maasdam emmental is a medium-soft cheese with a gorgeous texture and flavour. A mild flavour profile, this cheese is very easy to eat and is enhanced by a sweet fruit condiment. As part of the aging process the cheese develops large air pockets which add an interesting texture and visual element to the cheese.
Made by Mercer Cheese (1 hour south of Auckland in New Zealand's North Island) by master cheese maker Albert Alferink. Mercer Cheese has been producing award winning small batch artisanal cheese from their small farm at Tuakau for over 20 years.
Ideal for pairing with a fruity paste, condiment or cured meat on baguette, oat cakes or crackers, or simply enjoyed by itself.
We recommend a wine match of a sweeter light white wine (Pinot Gris, Riesling) or a lighter style Pinot Noir or earthy red varietal.
