A rare sheep milk blue vein, this cheese is a medium blue cheese with distinctive sheep taste. Whilst not overly strong, sheep milk does have a distinctive flavour which complements the sharpness of the blue culture nicely. Semi firm, with a naturally occurring rind, this blue cheese is a great one to try from award winning cheesemakers Thorvald.
Thorvald's dairy is situated in the Neudorf Valley in Nelson's Upper Moutere. An artisan's paradise, the soil in the Moutere is perfect for vines, fruit, mushrooms, and pasture. Ideal for pairing with a fruity paste, condiment, honey comb, a slice of green apple or pear, walnuts or almonds. Serve on baguette, oat cakes or crackers, or simply enjoy by itself.
We recommend a wine match of a sweeter white wine (Pinot Gris, Riesling, or sticky - port, sauternes etc) or an earthy Pinot Noir or other red varietal.
